rainbow (or neopolitan) cupcakes
Made these with a group of primary school children. They really enjoyed creating the colours but don't let them mix too much at that stage or the cupcakes loose their light texture. Option : Leave out the colourings & make lemon cupcakes by adding grated lemon zest & topping with lemon icing.

Ingredients
- 1 cup white sugar
- 113 grams butter
- 2 - eggs
- 2 teaspoons vanilla extract
- 1 1/2 cups flour (then take 2 tablespoons out)
- 2 tablespoons cornflour
- 1 3/4 teaspoons baking powder
- 3/4 cup milk
- 1 teaspoon white vinegar

Step 1Preheat over to 180 C & line muffin pans with paper liners. Mix the cup of milk & teaspoon of vinegar together & set aside. In a medium bowl, cream together the sugar and butter. This needs to be beaten really well.. 6-8 minutes.. until really creamy Beat in the eggs, one at a time, beating well again for about 5 minutes. Stir in the vanilla

Step 2Sift flour, cornflour, salt and baking powder together. Add dry ingredients to the creamed mixture alternately with milk (a bit of flour, a bit of milk, a bit of flour, a bit of milk..) mix well. Stir until batter is smooth. Divide batter into 4 or more equal portions in separate bowls. Colour each a different colour with food colouring &/or cocoa.

Step 3Spoon mix into the prepared pan/cases, putting one teaspoonful of each colour per case. Start with one colour & do all 12 then add next colour, etc. Bake for approx. 20 minutes or until cupcakes spring back to the touch. Ice tops & decorate as desired
