I love that these muffins are the right amount of chocolate and peanutbutter! PLUS you get all the wonderfulness from the PB2 peanutbutter being a lot healthier for you than regular peanutbutter. Totally my guilt free go to :)

Ingredients

  • 1 1/2 c
    all purpose flour
  • 7 oz
    coarsely chopped dark chocolate
  • 1 1/4 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1/8 tsp
    salt
  • 3
    eggs
  • 1/2 c
    skim milk
  • 1/4 c
    plus 2 tbsp sugar
  • 2 1/2 Tbsp
    pb2 chocolate powdered peanutbutter
  • 1
    individual container of sugar free chocolate pudding

How to Make Dark chocolate peanut butter muffins

Step-by-Step

  1. In a mixer, combine all dry ingredients (except chopped chocolate) mix well
  2. Add remaining ingredients and mix on low for 30seconds to 1 minute, making sure all ingredients are combined well.
  3. pour batter into greased muffin tin or loaf pan, cook at 350 for 20-25 minutes
