Coastal Bend refers to the flat area of land along the Texas coast. This old recipe was published in "The Gray Gazette," the newsletter of Senior Link, a group of nonprofit services for seniors, their families, and professionals in the Coastal Bend area. Unfortunately, the contributor's name was not included. This recipe makes a large quantity of muffins, but the batter will keep in the refrigerator for up to one month. Just use enough to make the number of muffins you want, whether two or two dozen.

Ingredients

  • 12 cups raisin bran cereal (approx. 30-oz. box)
  • 5 cups flour
  • 1 quart buttermilk
  • 2 cups sugar
  • 1 cup vegetable oil
  • 4 - eggs, beaten
  • 5 teaspoons baking soda
  • 2 teaspoons salt

How To Make coastal bend bran muffins

  • Step 1
    In a large mixing bowl combine cereal, flour, salt and soda.
  • Step 2
    Add beaten eggs, oil, and buttermilk to the dry ingredients and mix well.
  • Step 3
    Allow batter to rest in covered bowl in the refrigerator several hours or overnight before using. This allows the bran time to be absorbed into the other ingredients.
  • Step 4
    Bake the desired number of muffins in a preheated, 400-degree oven for 12-15 minutes in paper-lined muffin tins. Do not stir batter down before scooping out the amount you need.
