Ingredients
- 1 1/2 cups quick cooking oats
- 1 1/2 cups boiling water
- 1 cup whole wheat flour
- 1/2 cup all purpose flour
- 3/4 cup unpacked brown sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 cup each honey and unsweetened applesauce
- 2 - egg whites
- 3 tablespoons butter or margarine, melted
- 1 teaspoon vanilla extract
- 1 1/2 cups peeled, cored, and finely chopped apples
- - cinnamon sugar to sprinkle on top
How To Make cinnamon apple muffins

Step 1Preheat oven to 325.

Step 2Pour boiling water over oats in a medium bowl. Stir and let stand for 20 minutes.

Step 3Combine flours and next 5 ingredients in a large bowl. Set aside.

Step 4In a small bowl, whisk together honey, applesauce, egg whites, butter and vanilla. Add applesauce mixture to oats and stir until smooth. Add oat mixture to flour mixture and stir until dry ingredients are moistened. Fold in chopped apples.

Step 5Spray large muffin tin with nonstick spray. Divide batter among 12 muffin cups. Sprinkle each muffin lightly with cinnamon sugar, if desired. Bake for 25 minutes, or until wooden pick inserted in middle comes out clean. Remove from pan and let cool.
