Ingredients

  • 2 c
    flour
  • 1 c
    sugar
  • 1 pkg
    instant butterscotch pudding mix
  • 1 pkg
    instant vanilla pudding mix
  • 2 tsp
    baking powder
  • 1 tsp
    salt
  • 1 c
    milk
  • 4
    eggs
  • 3/4 c
    canola oil
  • 1 tsp
    vanilla extract
  • ·
    streusel topping:
  • 2/3 c
    brown sugar
  • 1/2 c
    chopped pecans
  • 2 tsp
    cinnamon

How to Make Butterscotch Muffins

Step-by-Step

  1. In a bowl: combine the flour, sugar, pudding mixes, baking powder, and salt.
  2. In a bowl: combine the milk, eggs, oil and vanilla.
  3. Stir the wet ingredients into the dry; just until moistened.
  4. Fill greased or paper-lined muffin cups 2/3 full.
  5. Combine the topping ingredients; and sprinkle over the muffin batter.
  6. Bake at 350* for 15-20 minutes or until toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.
  7. Makes about 1 1/2 dozen muffins...Enjoy!
