Ingredients
- 2 cups flour
- 1 cup sugar
- 1 package instant butterscotch pudding mix
- 1 package instant vanilla pudding mix
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 cup milk
- 4 - eggs
- 3/4 cup canola oil
- 1 teaspoon vanilla extract
- - streusel topping:
- 2/3 cup brown sugar
- 1/2 cup chopped pecans
- 2 teaspoons cinnamon
How To Make butterscotch muffins

Step 1In a bowl: combine the flour, sugar, pudding mixes, baking powder, and salt.

Step 2In a bowl: combine the milk, eggs, oil and vanilla.

Step 3Stir the wet ingredients into the dry; just until moistened.

Step 4Fill greased or paper-lined muffin cups 2/3 full.

Step 5Combine the topping ingredients; and sprinkle over the muffin batter.

Step 6Bake at 350* for 15-20 minutes or until toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.

Step 7Makes about 1 1/2 dozen muffins...Enjoy!
