These are really moist.. and delicious; just bring on the coffee!!

Ingredients

  • 2 cups flour
  • 1 cup sugar
  • 1 package instant butterscotch pudding mix
  • 1 package instant vanilla pudding mix
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 4 - eggs
  • 3/4 cup canola oil
  • 1 teaspoon vanilla extract
  • - streusel topping:
  • 2/3 cup brown sugar
  • 1/2 cup chopped pecans
  • 2 teaspoons cinnamon

How To Make butterscotch muffins

  • Step 1
    In a bowl: combine the flour, sugar, pudding mixes, baking powder, and salt.
  • Step 2
    In a bowl: combine the milk, eggs, oil and vanilla.
  • Step 3
    Stir the wet ingredients into the dry; just until moistened.
  • Step 4
    Fill greased or paper-lined muffin cups 2/3 full.
  • Step 5
    Combine the topping ingredients; and sprinkle over the muffin batter.
  • Step 6
    Bake at 350* for 15-20 minutes or until toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.
  • Step 7
    Makes about 1 1/2 dozen muffins...Enjoy!
