I make this with Milled flax seed, I am not sure if this is the same as flaxseed meal. I think it is because mine looks nothing like this! mine is dark brown and kind of grainy BUT I love it. I tried with cinnamon butter, and cream cheese, and low carb cottage cheese mixed with 1/4 teaspoon of low carb blackberry jam! super good, and very very filling!!!

Ingredients

  • 1/4 c
    flaxseed meal
  • 1/2 tsp
    baking powder
  • 1 tsp
    splenda (1/2 packet)
  • 1 tsp
    cinnamon
  • 1 large
    egg, slightly beaten
  • 1 tsp
    butter, melted

How to Make Atkins recipe - Muffin in a Minute

Step-by-Step

  1. Mix flaxseed meal, (I use milled flaxseed) baking powder, splenda, and cinnamon in a coffee mug or a single serving soufflé dish.
  2. add egg and melted butter
  3. microwave 1 minute or more until firm. (1 minute worked perfect for my microwave!)
  4. turn out and serve with butter, cream cheese or any other topping you like!! enjoy!
