atkins recipe - muffin in a minute

I make this with Milled flax seed, I am not sure if this is the same as flaxseed meal. I think it is because mine looks nothing like this! mine is dark brown and kind of grainy BUT I love it. I tried with cinnamon butter, and cream cheese, and low carb cottage cheese mixed with 1/4 teaspoon of low carb blackberry jam! super good, and very very filling!!!

Ingredients

  • 1/4 cup flaxseed meal
  • 1/2 teaspoon baking powder
  • 1 teaspoon splenda (1/2 packet)
  • 1 teaspoon cinnamon
  • 1 large egg, slightly beaten
  • 1 teaspoon butter, melted

  • Step 1
    Mix flaxseed meal, (I use milled flaxseed) baking powder, splenda, and cinnamon in a coffee mug or a single serving soufflé dish.
  • Step 2
    add egg and melted butter
  • Step 3
    microwave 1 minute or more until firm. (1 minute worked perfect for my microwave!)
  • Step 4
    turn out and serve with butter, cream cheese or any other topping you like!! enjoy!
