The first muffin in a minute is made with flaxseed, I tried this with soy flour and I think I like it better. it is 5 carbs for this and it is a big muffin. still make it in a coffee cup! nothing has changed except the soy flour!

1/4 c
soy flour
1/2 tsp
baking powder
1 tsp
splenda (1/2 packet)
1 tsp
1 large
egg, slightly beaten
1 tsp
butter, melted

How to Make Atkins - Muffin in a minute w/soy flour


  • 1Mix flaxseed meal, (I use milled flaxseed) baking powder, splenda, and cinnamon in a coffee mug or a single serving soufflĂ© dish.
  • 2add egg and melted butter
  • 3microwave 1 minute or more until firm. (1 minute worked perfect for my microwave!)
  • 4turn out and serve with butter, cream cheese or any other topping you like!! enjoy!
