Great to just grab and go if you don't have time to sit and eat breakfast. I used cranberry and sultanas in this. Great to use all the little bits of dried fruit the is left in the cupboard You can also use wholemeal flour for a slightly denser biscuit. Make double the quantity and freeze half to bake later

Ingredients

  • 100 grams butter, softened
  • 25 grams golden caster sugar
  • 1 - medium egg yolk
  • 50 grams oats, regular
  • 25 grams oatmeal
  • 75 grams plain flour
  • 1/2 teaspoon baking powder
  • 50 grams dried fruit

How To Make breakfast biscuits

  • Step 1
    Pre heat the oven to 160c, 325f gas mark 3. Line 2 baking trays with baking parchment.
  • Step 2
    Beat butter and sugar together until pale and fluffy. In a separate bowl mix all the other ingredients. Add to the butter mix to make a stiff dough. Cill in the fridge for 10/15 mins.
  • Step 3
    Roll out the dough on a floured surface to a rectangle. 22x16 cm. cut into 12 biscuits and bake on the trays for 15 to 20 mins. Cool on the tray for a few mins then transfer to cooling tray.
