Have any left over mashed sweet potatoes? These are perfect biscuits to use the left overs with. I like to drizzle them w/maple syrup, yum!

Ingredients
- 1 cup flour
- 3 teaspoons baking powder
- 2 teaspoons sugar
- 1/2 teaspoon salt
- 2 tablespoons butter, cut up
- 3/4 cup mashed sweet potato
- 1/4 cup milk
How To Make sweet potato biscuits

Step 1Heat oven to 400. Place parchment paper on a lg baking sheet. In bowl, stir together flour, baking powder, sugar and salt.

Step 2Cut in butter until it resembles coarse crumbs. Mix in sweet potatoes and enough milk to make a soft dough. Place dough on floured surface, out to 1/2"-thick.

Step 3Cut dough into circles w/ a biscuit cutter or a glass. Place biscuits 1" apart on baking sheet. Bake 12-15 mins, or until golden brown.
