sour cream biscuits

Being from the South, I am always on a quest for the perfect biscuit! I have TWO go to recipes-the other one is Sister Biscuit which can also be found on JAP.

Ingredients

  • 2 cups all purpose flour
  • 2 1/2 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 4 ounces butter, cold (cubed)
  • 4 ounces butter milk
  • 2 tablespoons sour cream

How To Make sour cream biscuits

  • Step 1
    Make sure the butter is COLD! Preheat oven to 450.
  • Step 2
    Combine flour, baking powder, baking soda and salt. Cube COLD butter and cut into flour mixture.
  • Step 3
    Add buttermilk and sour cream to flour mixture. Stir with a large fork just until combined (add a touch more milk if too dry)
  • Step 4
    Flour the work surface and knead the dough not more than 10-12 times. Roll out dough 1/2" thick. Cut with 2 3/4" biscuit cutter. (At this point you could layer these single layer in a freezer safe parchment lined container to freeze for later use) Place in biscuit pan with sides slightly touching. Bake at 450 for 8-12 min. (If baking from frozen state, reduce oven temp to 425 and bake 12-13 min)
