apple muse and almond shortcake biscuits

This is a twist on a very very very old (medieval type of old) favourite! Apple muse is a pottage, very common in medieval kitchens. Even though sweet this is a fairly healthy treat. The almond biscuits were my own addition to the pottage as I felt it would go better with something. So using the leftover almonds from the almond milk I made biscuits - it definitely pulled the dessert together.

Ingredients

  • APPLE MUSE
  • 4 - red apples, peeled, cored and sliced
  • 4 tablespoons honey
  • 1 pinch salt
  • 1 1/2 cups bread crumbs, fresh
  • 5 sprigs thyme, leaves (or to taste)
  • - red food coloring drops (to liking)
  • ALMOND MILK
  • 1 cup almonds, ground
  • 2 cups water, boiling
  • ALMOND BISCUITS
  • 1 cup almonds, ground (leftover from almond milk)
  • 2 1/3 cups bisquick mix
  • 3 tablespoons sugar
  • 3 tablespoons butter, room temperature
  • 1/2 cup milk

How To Make apple muse and almond shortcake biscuits

  • Step 1
    To make the Almond Milk: Boil the water, remove from heat and add ground almonds. Let steep for 5 minutes, stirring occasionally. Then put through a sieve and save the leftover almond pieces.
  • Step 2
    To Make Apple Muse: Boil apples until soft then mash, but leaving quite a few chunks of apple.
  • Step 3
    Add the almond milk, bread crumbs, salt, thyme, honey, and food coloring over low heat. Stirring constantly. This part is now finished.
  • Step 4
    To Make the Biscuits: Pre-heat oven to 425F Combine bisquick, milk, sugar, butter, and ground almonds until smooth and doughy.
  • Step 5
    divide evenly into 10 spoonfuls and put on baking sheet. Place in oven for 12 minutes.
  • Step 6
    To Serve: Cut biscuit in half, butter and then put apple muse in between the biscuits.
