Vegan Broccoli and Cauliflower salad

This is what I am making to pick nick with on our road trip to Ohio. It is my own version of one my mom used to make for cookouts when I was a kid.

  •   1 bunch
    cauliflower, cut up into small flourets
  •   1 bunch
    briccoli, cut into small flourets
  •   1 can(s)
    black olives, sliced
  •   1 jar(s)
    green olives, with pimentoes sliced
  •   1 pt
    cherry tomatoes, halved
  •   1 pkg
    vegan mozzarella cheese
  •   1/2 c
    bacos bits, bacos chips(they are vegan)
  •   1 c
    italian dressing (your choice)

How To Make

    I like to blanch my broccoli and cauliflower for about 3 minutes in boiling salted water, and then shock in ice water. You can leave it raw, but blanching it gives it a nice vibrant color.

    put all ingredients into a large bowl and toss.

    let marinade in the fridge for 30 minutes or over night. this is one of those dishes that is better made the night before.
