vegan broccoli and cauliflower salad

This is what I am making to pick nick with on our road trip to Ohio. It is my own version of one my mom used to make for cookouts when I was a kid.

Ingredients

  • 1 bunch cauliflower, cut up into small flourets
  • 1 bunch briccoli, cut into small flourets
  • 1 can black olives, sliced
  • 1 jar green olives, with pimentoes sliced
  • 1 pint cherry tomatoes, halved
  • 1 package vegan mozzarella cheese
  • 1/2 cup bacos bits, bacos chips(they are vegan)
  • 1 cup italian dressing (your choice)

How To Make vegan broccoli and cauliflower salad

  • Step 1
    I like to blanch my broccoli and cauliflower for about 3 minutes in boiling salted water, and then shock in ice water. You can leave it raw, but blanching it gives it a nice vibrant color.
  • Step 2
    put all ingredients into a large bowl and toss.
  • Step 3
    let marinade in the fridge for 30 minutes or over night. this is one of those dishes that is better made the night before.
