turkey quesadillas

My children have always loved quesadillas rather with cheese alone or with leftover turkey. I know how much my family has enjoyed this recipe so I wanted to share with my recipe friends.

Ingredients

  • 2 1/2 cups turkey (shredded)
  • 2/3 cup salsa (i prefer mild)
  • 1/3 cup green onions (chopped)
  • 3/4 teaspoon ground cumin
  • 1/2 teaspoon salt and pepper
  • 1/2 teaspoon oregano, dried
  • 4 large tortillas, flour
  • 1/4 cup butter, room temperature
  • 2 cups monterey jack cheese (shtedded)
  • 1/2 cup sour cream (optional)
  • 1/2 cup guacamole (optional)

How To Make turkey quesadillas

  • Step 1
    In large skillet, combine first 6 ingredients. Cook uncovered over medium heat for 10 minutes, stirring occasionally.
  • Step 2
    Brush butter on one side of tortilla. Place butter side down on baking sheet.
  • Step 3
    Spoon one-half of turkey mixture on tortilla. Butter another tortilla, place on top of cheese. Butter side up. Repeat steps to make 2 tortilla stacks.
  • Step 4
    Bake at 475 degrees for 10 minutes. Cut into wedges. Serve with sour cream and guacamole.
