This is a very old family recipe and has been gradually updated through out the years. Enjoy!

1 (15 oz) can(s)
black-eyed peas, drained and rinsed
1 (4 oz) can(s)
black olives, chopped
1/2 c
green bell pepper, finely chopped
1/4 c
red bell pepper, finely chopped
4 medium
scallions (white and 2 inches green), finely chopped
2 clove
garlic, minced
1/4 c
pickled jalapeno peppers, minced
1 tsp
ground cumin
2 Tbsp
fresh cilantro, chopped
1 Tbsp
apple cider vinegar
1/4 tsp
2 Tbsp
olive oil

How to Make Texas Caviar


  • 1In a large bowl, combine all ingredients.
  • 2Stir to mix well.
  • 3Cover and refrigerate, about 2 hours, until ready to serve. Serve with tortilla chips.
