Makes 3 1/2 cups
Ingredients
- 1 (15 oz) can black-eyed peas, drained and rinsed
- 1 (4 oz) can black olives, chopped
- 1/2 cup green bell pepper, finely chopped
- 1/4 cup red bell pepper, finely chopped
- 4 medium scallions (white and 2 inches green), finely chopped
- 2 cloves garlic, minced
- 1/4 cup pickled jalapeno peppers, minced
- 1 teaspoon ground cumin
- 2 tablespoons fresh cilantro, chopped
- 1 tablespoon apple cider vinegar
- 1/4 teaspoon salt
- 2 tablespoons olive oil
How To Make texas caviar

Step 1In a large bowl, combine all ingredients.

Step 2Stir to mix well.

Step 3Cover and refrigerate, about 2 hours, until ready to serve. Serve with tortilla chips.
