1 (15 oz) can(s)black-eyed peas, drained and rinsed

1 (4 oz) can(s)black olives, chopped

1/2 cgreen bell pepper, finely chopped

1/4 cred bell pepper, finely chopped
-
4 mediumscallions (white and 2 inches green), finely chopped
-
2 clovegarlic, minced
-
1/4 cpickled jalapeno peppers, minced
-
1 tspground cumin
-
2 Tbspfresh cilantro, chopped
-
1 Tbspapple cider vinegar
-
1/4 tspsalt
-
2 Tbspolive oil
How to Make Texas Caviar
- In a large bowl, combine all ingredients.
- Stir to mix well.
- Cover and refrigerate, about 2 hours, until ready to serve. Serve with tortilla chips.
