This is a very old family recipe and has been gradually updated through out the years. Enjoy!

Ingredients

  • 1 (15 oz) can black-eyed peas, drained and rinsed
  • 1 (4 oz) can black olives, chopped
  • 1/2 cup green bell pepper, finely chopped
  • 1/4 cup red bell pepper, finely chopped
  • 4 medium scallions (white and 2 inches green), finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup pickled jalapeno peppers, minced
  • 1 teaspoon ground cumin
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon apple cider vinegar
  • 1/4 teaspoon salt
  • 2 tablespoons olive oil

How To Make texas caviar

  • Step 1
    In a large bowl, combine all ingredients.
  • Step 2
    Stir to mix well.
  • Step 3
    Cover and refrigerate, about 2 hours, until ready to serve. Serve with tortilla chips.
