I modified this to a Plan-Based recipe by replacing the olive oil in the original recipe with vegetable broth. Still tastes great!!

Ingredients

  • 1 can(s)
    white shoepeg corn
  • 1 can(s)
    black-eyed peas
  • 1 can(s)
    black beans
  • 4 oz
    chopped pimento
  • 4 oz
    chopped jalapeño or mild green chiles
  • 1 c
    diced celery
  • 1
    red onion, diced
  • 1 c
    vegetable broth
  • 1/2 c
    apple cider vinegar
  • ·
    salt and pepper to taste

How to Make Texas Caviar

Step-by-Step

  1. Drain & rinse canned vegetables
  2. Mix with rest of vegetables
  3. Mix vegetable broth and vinegar. Pour over vegetables. Stir well.
  4. Mix well & marinate overnight
  5. Drain marinade & serve with scoopable chips
