I modified this to a Plan-Based recipe by replacing the olive oil in the original recipe with vegetable broth. Still tastes great!!

Ingredients
- 1 can white shoepeg corn
- 1 can black-eyed peas
- 1 can black beans
- 4 ounces chopped pimento
- 4 ounces chopped jalapeño or mild green chiles
- 1 cup diced celery
- 1 - red onion, diced
- 1 cup vegetable broth
- 1/2 cup apple cider vinegar
- - salt and pepper to taste
How To Make texas caviar

Step 1Drain & rinse canned vegetables

Step 2Mix with rest of vegetables

Step 3Mix vegetable broth and vinegar. Pour over vegetables. Stir well.

Step 4Mix well & marinate overnight

Step 5Drain marinade & serve with scoopable chips
