I modified this to a Plan-Based recipe by replacing the olive oil in the original recipe with vegetable broth. Still tastes great!!

Step-by-Step

  • 1Drain & rinse canned vegetables
  • 2Mix with rest of vegetables
  • 3Mix vegetable broth and vinegar. Pour over vegetables. Stir well.
  • 4Mix well & marinate overnight
  • 5Drain marinade & serve with scoopable chips
