It is that sweet potato time of the year and these will become one of your new fave snacks. They have a great dichotomy of sweet and tangy plus the sweet and salty. The baked chips are great by themselves but it is that squeeze of lime and sprinkling of salt that really kick them up. So simple, yet so delicious! When I make these I can't stop eating them, especially w/ a nice cool drink @ my side (margarita anyone?). Unless you have a mandolin, it may be tedious trying to slice a larger amount of potatoes so I usually serve in small gatherings w/ several varieties of drinks. Snack happy!

Oh, I love sweet potatoes. This is just a perfect recipe for when I am craving some chips. The addition of lime is really what makes these. Next time I need to add the margarita!

Ingredients For sweet potato chips with a hint of lime

    medium sweet potatoes, thinly sliced
  • 4 Tbsp
    olive oil, extra virgin
  • 4
    limes
  • sea salt, for sprinkling

How To Make sweet potato chips with a hint of lime

    Preheat oven to 450 degrees F. Thinly slice sweet potatoes (with skin on). Lay slices on 2 parchment covered baking sheets. Using a pastry brush, generously brush slices w/ olive oil.

    Bake slices for 15 - 20 minutes until crispy. Place on serving platter and squeeze generous amounts of lime juice over chips; follow w/ a sprinkling of salt. Use the same baking sheets for the remainder of slices and follow as above.
