Ingredients

ears of sweetcorn, about 2 c cut off the cob
1/2 c
flour
1/3 c
yellow cornmeal
1 tsp
salt
1/2 tsp
baking soda
1
egg
1/2 c
milk
4 Tbsp
olive oil
1 Tbsp
butter
1/2 c
grated cheese (optional)
2 Tbsp
bacon bits (optional)
1/4 c
finely minced onion (optional)

How to Make Sweet Corn Fritter

Step-by-Step

  • 1Sift dry ingredients together in a small mixing bowl.
  • 2Make a well in the dry ingredients, add the egg and milk.
  • 3Stir until just combined, mixture will be lumpy
  • 4IF you are using the optional ingredients (and I highly recommend them) add them now and stir all together gently.
  • 5Fry these up in the melted butter and olive oil at a med heat, make sure you skillet is hot before adding the fritters.....also, you only need 1/8 to 1/4 inch of oil to fry these in.
    Fry them until lightly browned on each side, remove to paper towels to drain and enjoy....you can salt and pepper to taste.
  • 6We like these for breakfast, but they make a nice side for fish or grilled foods too.
