Got this off of fb, we just love them.

Ingredients

  • 2 - ears of sweetcorn, about 2 c cut off the cob
  • 1/2 cup flour
  • 1/3 cup yellow cornmeal
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 - egg
  • 1/2 cup milk
  • 4 tablespoons olive oil
  • 1 tablespoon butter
  • 1/2 cup grated cheese (optional)
  • 2 tablespoons bacon bits (optional)
  • 1/4 cup finely minced onion (optional)

How To Make sweet corn fritter

  • Step 1
    Sift dry ingredients together in a small mixing bowl.
  • Step 2
    Make a well in the dry ingredients, add the egg and milk.
  • Step 3
    Stir until just combined, mixture will be lumpy
  • Step 4
    IF you are using the optional ingredients (and I highly recommend them) add them now and stir all together gently.
  • Step 5
    Fry these up in the melted butter and olive oil at a med heat, make sure you skillet is hot before adding the fritters.....also, you only need 1/8 to 1/4 inch of oil to fry these in. Fry them until lightly browned on each side, remove to paper towels to drain and enjoy....you can salt and pepper to taste.
  • Step 6
    We like these for breakfast, but they make a nice side for fish or grilled foods too.
