Ingredients
- 2 - ears of sweetcorn, about 2 c cut off the cob
- 1/2 cup flour
- 1/3 cup yellow cornmeal
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1 - egg
- 1/2 cup milk
- 4 tablespoons olive oil
- 1 tablespoon butter
- 1/2 cup grated cheese (optional)
- 2 tablespoons bacon bits (optional)
- 1/4 cup finely minced onion (optional)
How To Make sweet corn fritter

Step 1Sift dry ingredients together in a small mixing bowl.

Step 2Make a well in the dry ingredients, add the egg and milk.

Step 3Stir until just combined, mixture will be lumpy

Step 4IF you are using the optional ingredients (and I highly recommend them) add them now and stir all together gently.

Step 5Fry these up in the melted butter and olive oil at a med heat, make sure you skillet is hot before adding the fritters.....also, you only need 1/8 to 1/4 inch of oil to fry these in. Fry them until lightly browned on each side, remove to paper towels to drain and enjoy....you can salt and pepper to taste.

Step 6We like these for breakfast, but they make a nice side for fish or grilled foods too.
