How to Make Sweet Corn Fritter

Step-by-Step

  1. Sift dry ingredients together in a small mixing bowl.
  2. Make a well in the dry ingredients, add the egg and milk.
  3. Stir until just combined, mixture will be lumpy
  4. IF you are using the optional ingredients (and I highly recommend them) add them now and stir all together gently.
  5. Fry these up in the melted butter and olive oil at a med heat, make sure you skillet is hot before adding the fritters.....also, you only need 1/8 to 1/4 inch of oil to fry these in.
Fry them until lightly browned on each side, remove to paper towels to drain and enjoy....you can salt and pepper to taste.
  6. We like these for breakfast, but they make a nice side for fish or grilled foods too.
