My family loves spinach and hardboiled eggs. I seen this recipe in one of our local papers. I made the recipe and everyone enjoyed it.Real great appetizer and easy to make.

Ingredients

4 - hard-boiled eggs,halved
2 ounces ricotta cheese, part-skim
2 tablespoons grated parmesan cheese
2 tablespoons cooked spinach,finely chopped
- salt and pepper
pinch freshly grated nutmeg
1/2 teaspoon cayenne pepper

How To Make spinach stuffed eggs

Step 1

Remove the yolks from the eggs and put in a small mixing bowl.

Step 2

Add the cheeses and spinach
Step 3

Beat the mixture until it is smooth Season to taste with salt,pepper and nutmeg and then pile back into the egg whites.
Step 4

Sprinkle over the cayenne
