Ingredients

  • 2 large (10-inch) flour or whole wheat tortillas
  • 2 tablespoons nonfat plain yogurt
  • 1 - 10oz. packages frozen chopped spinach, thawed and squeezed dry
  • 1 large tomato, chopped
  • 1/2 cup shredded reduced fat mexican-blend cheese
  • 1/4 cup chopped green onions

How To Make spinach & cheese tortilla pizza-diabetic friendly

  • Step 1
    PREHEAT: Oven to 450 degrees F. COAT: Baking sheet with nonstick cooking spray.
  • Step 2
    PLACE: Tortillas on baking sheet. BAKE: 2 minutes, or until golden brown. REMOVE: From oven and reduce oven temperature to 350 degrees F.
  • Step 3
    SPREAD: Yogurt evenly over tortillas. TOP: With spinach and tomato and sprinkle with cheese.
  • Step 4
    RETURN: To oven 5 minutes more or until cheese is melted. SPRINKLE: With green onions. CUT: Each tortilla into 6 slices. SERVE & ENJOY!
