Ingredients

  • 2 large
    (10-inch) flour or whole wheat tortillas
  • 2 Tbsp
    nonfat plain yogurt
  • 1 - 10oz. pkg
    frozen chopped spinach, thawed and squeezed dry
  • 1 large
    tomato, chopped
  • 1/2 c
    shredded reduced fat mexican-blend cheese
  • 1/4 c
    chopped green onions

How to Make SPINACH & CHEESE TORTILLA PIZZA-DIABETIC FRIENDLY

Step-by-Step

  1. PREHEAT: Oven to 450 degrees F.
    COAT: Baking sheet with nonstick cooking spray.
  2. PLACE: Tortillas on baking sheet.
    BAKE: 2 minutes, or until golden brown.
    REMOVE: From oven and reduce oven temperature to 350 degrees F.
  3. SPREAD: Yogurt evenly over tortillas.
    TOP: With spinach and tomato and sprinkle with cheese.
  4. RETURN: To oven 5 minutes more or until cheese is melted.
    SPRINKLE: With green onions.
    CUT: Each tortilla into 6 slices.
    SERVE & ENJOY!
