- 2 large (10-inch) flour or whole wheat tortillas
- 2 tablespoons nonfat plain yogurt
- 1 - 10oz. packages frozen chopped spinach, thawed and squeezed dry
- 1 large tomato, chopped
- 1/2 cup shredded reduced fat mexican-blend cheese
- 1/4 cup chopped green onions
How To Make spinach & cheese tortilla pizza-diabetic friendly

Step 1PREHEAT: Oven to 450 degrees F. COAT: Baking sheet with nonstick cooking spray.

Step 2PLACE: Tortillas on baking sheet. BAKE: 2 minutes, or until golden brown. REMOVE: From oven and reduce oven temperature to 350 degrees F.

Step 3SPREAD: Yogurt evenly over tortillas. TOP: With spinach and tomato and sprinkle with cheese.

Step 4RETURN: To oven 5 minutes more or until cheese is melted. SPRINKLE: With green onions. CUT: Each tortilla into 6 slices. SERVE & ENJOY!
