MY FAMILY LOVES THIS RECIPE. MY DAUGHTER HAS MADE IT SEVERAL TIMES FOR A PITCH IN WHERE SHE WORKS AND LEAVES WITH AN EMPTY CROCK POT.

Ingredients

2 box
frozen chopped spinach (thawed, place in colander to drain)
3 c
pepperidge farm herb stuffing mix or sage
1 large
onion, finely chopped

eggs, well beaten
3/4 c
melted butter or margarine
1 c
parmesan cheese
1 tsp
blk pepper
1 1/2 tsp
garlic salt
1/2 tsp
thyme, dried

Step-By-Step

1COMBINE ALL INGREDIENTS IN LG. BOWL, MIX WELL.
2USING TABLESPOON OR ICE CREAM SCOOPER, SHAPE INTO BALLS.
3BAKE ON UNGREASED COOKIE SHEET AT 325 DEGREES FOR APPROXMATELY 30 TO 40 MINS. CAN CHECK TO SEE IF DONE BEFORE THAT. CAN PLACE IN CROCKPOT TO KEEP WARM IF SERVING FOR A PARTY. YOU CAN ALSO FREEZE THE SPINACH BALLS AHEAD OF TIME BEFORE BAKING.
