Standard sweet corn fritters with a twist. Great with bacon n fried tomatoes or with lambsfry

Ingredients

  • 3/4 cup plain flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 - egg
  • 1 can cream style sweetcorn 440gm
  • - oil
  • - milk
  • 1/8 - capsicum
  • 1 tablespoon sweet chilli sauce
  • 1/2 teaspoon cracked pepper

How To Make spicy corn fritters

  • Step 1
    Sift flour, baking powder and salt into bowl. Add cracked pepper. Mix in egg n sweet chilli sauce. Finely chop capsicum, stir in. Mix in tin of corn. Add milk to achieve consistency of pancake mix, Slightly wet is best. Cook as per pancakes in hot pan medium high.
  • Step 2
    Serving suggestion 1. Fry quality bacon, slice tomatos crossways in 3rds/slices, fry, stack alternating fritter n bacon top with tomato.
  • Step 3
    Serving suggestion 2. Thinly cut lambs fry, quickly fry off in pan ( drop in turn over take out ) Do not roll in flour etc, just a sprinkle of salt in pan with oil. Serve with quality whole grain bread n butter.
