This is a very healthy low carb snack, or can be served as a side dish. Far too moorish, I have been know to scoff the whole lot by myself, in one sitting. Great hot or cold, good for parties, picnics or with a glass of beer.

yield 1 -8 (depending on how greedy you are)

Ingredients

  • 1 large cauliflower
  • 2 teaspoons fajita seasoning
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon asafoetida
  • 1 pinch salt
  • 1 - lime
  • 1 tablespoon olive oil

How To Make spiced cauliflower

  • Step 1
    Break the raw cauliflower into small florets
  • Step 2
    Combine all the other ingredients in a large bowl and toss the florets in the marinade.
  • Step 3
    Leave the cauliflower in the marinade for about 1 hour whilst your oven gets up to temperature. Approx180c
  • Step 4
    Turn your marinaded cauliflower onto a baking tray, spoon over any remaining marinate, and bake in the oven for 30 mins or until the cauliflower is cooked. It should be slightly crunchy but not burnt.
  • Remember this is for sharing, but can be a snack or a side dish.
    Step 5
    Try and not to scoff the lot before anyone else gets to try it. Very hard to do but restrain yourself.
