southern tomato pie

When we moved to NC from IL. we stopped at nursery to look at plants and they had some food tents. Well I was going thru one with lots of fresh garden veggies and some homemade treats. One of those treats was a Southern Tomato Pie! It looked so good that I bought one. It was awesome!! Here a recipe I use, just like the one I first tried! I have use Heirloom tomatoes, yellow or a mixture. Yum!!! I would love to see this in a restaurant menu as an appetizer with a dollop of sour cream!!

Ingredients
- 2 - pie crusts
- 2 pounds tomatoes
- 1/4 cup chopped herbs- basil,thyme or oregano or combination of.
- 1 bunch green onions
- 1 1/2 cups sharp cheddar cheese
- 1/3 cup reduced fat mayo
- 2 tablespoons lemon juice
How To Make southern tomato pie

Step 1Preheat oven to 450* Line bottom of pie crust with foil and fill with beans or pie weights. bake 8 min.

Step 2Reduce oven to 350* Layer tomatoes, herbs, onions and cheese evenly in pie shell. Mix lemon juice, mayo and salt and pepper-to your liking and spread over top. Place second crust on top. Bake 45-50 min. Let stand 10-15 min.
