samosas simplified
This is my take on making Samosas, since these are not the traditional ones ( of course) however this easy method is just as delicious, and they are healthy since they are baked..Vegan and Vegetarian friendly.

Ingredients
- 1 package pre-made empanada discs
- 1 can chick peas, drained
- 1 medium potato, peeled
- 1/2 small onion, finely diced
- 1/4 cup peas
- 1/2 teaspoon curry powder
- 1/4 teaspoon cumin powder
- 1/4 teaspoon tumeric, powder
- 1 tablespoon olive oil
- - salt and pepper
How To Make samosas simplified

Step 1Start by cutting the peeled potato, cut in small pieces and boil in salted water for 3-4 mins, drain and set aside.

Step 2In a skillet, saute the diced onion in the olive oil a few mins, add in the spices and combine.

Step 3add the chick peas and potatoes and stir well, with a fork mash everything, till chunky but not mushy.

Step 4add in the peas and gently stir...This is the filling.

Step 5cut each disc in half, add a bit of filling and moisten the edges with water and fold and press.

Step 6pre heat oven to 350 degrees.

Step 7place the samosas on a lightly greased cookie sheet and brush each with egg wash ( slightly beaten egg w/a little water.

Step 8bake about 20 mins or till golden brown.. Enjoy...I like to dip in any yummy chutney.
