~ my awesome bruschetta ~

I made this Bruschetta with ingredients I had, that needed used up. It's so full of flavor. I think the marinated peppers really made it pop. Make sure you use the roasted red peppers marinated in olive oil and garlic. So good! Sure to please at your next party! Enjoy!

Ingredients

  • 3 1/2 ounces roasted red peppers, marinated in olive oil and garlic - drained and chopped
  • 3 medium plum tomatoes, seeded and diced
  • 1 1/2 tablespoons shredded parmesan cheese
  • 1 tablespoon crumbled, feta cheese
  • 1 tablespoon basil paste or fresh chopped basil
  • 1/4 teaspoon each - kosher salt & fresh cracked pepper
  • 1 small clove garlic, minced
  • 1 - baguette, sliced and toasted

How To Make ~ my awesome bruschetta ~

  • Step 1
    In a medium bowl, combine all ingredients, but the baguette. Slice the baguette into desired thickness and toast under a broiler.
  • Step 2
    Add a heaping tablespoon if mixture to each slice of toasted bread. Sprinkle with more cheese if desired.
  • Step 3
    Enjoy!
