mozzarella & basil tomatoes

I'm sure there are all kinds of recipes of this sort floating around, but this is my very own special recipe. You can put them on the grill or you can bake them in the oven. They are delicious either way. My husband and I make this a lot in the summer when there are fresh tomatoes in our garden. You can't beat fresh home grown tomatoes!!

Ingredients
- 1 large ripe red tomato
- - mozzarella cheese
- - basil flakes, dried or dried basil leaves
- - salt and pepper
- - olive oil, extra virgin
How To Make mozzarella & basil tomatoes

Step 1Slice the tomato approximately 1/4 to 1/2 inch thickness (naturally the larger the slice the least amount of slices you will have)

Step 2Place tomato slices on a foil lined baking sheet. Salt & Pepper the Slices. Drizzle Olive Oil over each slice. (I generally buy the roll of Mozzarella that is pre sliced in 1/2 inch thickness but you can use shredded Mozzarella by all means) Place one slice (or a large pinch of shredded) Mozzarella on each slice of tomato.

Step 3Dust with dry basil flakes or place 1 basil leaf on top of the mozzarella - Bake in a 450* oven for 10 to 15 minutes or grill for approximately 10 minutes on foil wrapped grate. You can place them directly on the grill if you don't mind a mess :)
