How to Make Mozzarella & Basil Tomatoes
- Slice the tomato approximately 1/4 to 1/2 inch thickness (naturally the larger the slice the least amount of slices you will have)
- Place tomato slices on a foil lined baking sheet. Salt & Pepper the Slices. Drizzle Olive Oil over each slice. (I generally buy the roll of Mozzarella that is pre sliced in 1/2 inch thickness but you can use shredded Mozzarella by all means) Place one slice (or a large pinch of shredded) Mozzarella on each slice of tomato.
- Dust with dry basil flakes or place 1 basil leaf on top of the mozzarella - Bake in a 450* oven for 10 to 15 minutes or grill for approximately 10 minutes on foil wrapped grate. You can place them directly on the grill if you don't mind a mess :)
