italian nacho bites

We love this little "appy" and I get frequent requests to make it. A snap to make considering the high yumminess factor and the impressive presentation. Using the French baguette is easy and using the packaged pita or bagel chips is even easier. Hmmm.... quick and easy or quicker and easier?! It's cooks choice and so are the ingredients for topping. Use your own preferences and make this pretty little appy your own!

Ingredients

  • 28 slices (1/4 inch thick) of french baguette loaf ; cut into 2 inch diameter pieces or
  • 28 - pieces of packaged baked pita bread or bagel chips
  • - olive oil cooking spray
  • 1/2 pound bulk hot italian sausage
  • 2/3 cup alfredo sauce
  • 1 teaspoon italian seasoning
  • 1 large tomato or 4 plum tomatoes, seeded and chopped
  • 1 can (2 1/4 oz,) sliced black olives, drained
  • 1 1/2 cups mozzarella, shredded
  • - optional for garnish: fresh parsley, chopped

How To Make italian nacho bites

  • Step 1
    IF USING BAGUETTE SLICES: Heat oven to 400 degrees F. Line a large cookie sheet w/ foil. On the cookie sheet, arrange bread slices with sides touching. Spray tops lightly w/ cooking spray. Bake 6 - 8 minutes or until light golden brown. TO SAVE TIME: Use packaged, baked pita or bagel chips.
  • Step 2
    In large skillet, cook sausage over medium high heat for 6 minutes, stirring and breaking into small pieces, until browned; drain. Stir in Alfredo sauce and Italian seasoning.
  • Step 3
    Spoon sausage mixture over bread slices. sprinkle with tomato and olives. Top w/ cheese. Bake 5 - 6 minutes or until cheese is melted. If desired. sprinkle w/ fresh parsley. Serve while warm!
