This is a nice alternative to pizza and should be served as an appetizer because the crust is so much richer than pizza crust. An unexpected treat for guests.

Step-by-Step

  1. Preheat oven to 400 degrees. Place tomatoes on paper towels and sprinkle with 1/2 tsp salt. Pat dry after 30 minutes. In the meantime, roll out one puff pastry and place in an ungreased rectangular cookie sheet. Cut 1/2 inch strips from the remaining pastry sheet and make a lip around the rolled out pastry. Bake for 15 minutes until browned. Top pastry with mozzarella, place sliced tomatoes in a single layer and drop halved tomatoes evenly over top. Sprinkle with fresh herbs, garlic and pepper.
