This is one of those cases where I started with a basic guacamole recipe and played with it until it was how I like it best. Personally I like my guacamole "lumpy" not smooth. So I only mash up about half of the avocado and leave the rest in small chunky pieces.

Ingredients
- 1/3 cup red onion, finely chopped
- 2 small diced roma tomatoes
- 2 small jalapenos, minced
- 1 large clove garlic, minced
- 1/4 teaspoon salt
- dash - tabasco or other hot pepper sauce
- 2 tablespoons fresh cilantro, finely chopped
- 2 tablespoons fresh lime juice
- 2 or 3 large ripe avocados
How To Make guacamole grande

Step 1In a bowl that has a lid combine everything except the avocados and mix well.

Step 2Coarsely mash the avocados and then stir them into the bowl with the rest of the ingredients. Mix well. Squeeze just about 2 teaspoons of lime juice over the top, lay some plastic wrap on the top of the guacamole and let it hang over the sides of the bowl. Then put the top on the bowl. This will help keep the guacamole from turning an unappetizing brown color.
