When the weather turned I harvested my tomatoes and made this recipe. I found it on www.delish.com. I added some seasonings.

Ingredients

8 oz
green tomatoes
8 oz
ripe red tomatoes
1 c
fresh corn kernels (or frozen)
1/4 c
chop fresh chives - or 1/8 cup of fresh cilantro
2 Tbsp
fresh lemon juice
1/2 tsp
salt (or to taste)
1/8 tsp
coarsely ground pepper (or to taste)
taco seasoning mix (or to taste)

How to Make Green Tomato Salsa

Step-by-Step

  • 1Chop the red and green tomatoes. Chop the chives.
  • 2In medium bowl, gently stir tomatoes with corn, chives, lemon juice, taco seasonings, salt and pepper. Cover and refrigerate at least 1 hour to blend flavors, or up to 8 hours. Drain before serving if chilled longer than 1 hour.
