grandma gallimore's roasted cheezy okra
My mom grew up in Alabama with her mom and her Grandma Gallimore. This recipe is the way she made this for her family.

Ingredients
- 16 slices bacon
- 1 pound okra ( about 16 small ones)
- 8 ounces cream cheese
- 2 tablespoons fresh chives, chopped fine
- 1/2 cup sharp cheddar, grated
- 1/4 cup chopped green onion
- 1/4 teaspoon each of salt and pepper
How To Make grandma gallimore's roasted cheezy okra

Step 1Heat oven to 425^. Line baking pan with foil and grease with bacon lard. Place oven rack on lowest level.

Step 2Cook bacon in large skillet over medium heat for about 2 minutes on both sides, if it starts to curl it's done, drain on paper. Cut pieces in half..save drippings for another time.

Step 3Cut each okra pod the long way down the side, leave the stem of pod on each half; remove seeds and insides.

Step 4Stir together cream cheese, chives and remaining ingredients in a small bowl. Spoon cheese mixture into each okra pod. Wrap each one with 1 piece of bacon, and fasten with a wooden toothpick.

Step 5Put okra, cheese side up on foil pan. Bake for 8 minutes or until it's tender and bacon is crisp. Place on plate and keep warm; until ready to serve.
