How to Make Grandma Gallimore's Roasted Cheezy Okra

  1. Heat oven to 425^. Line baking pan with foil and grease with bacon lard. Place oven rack on lowest level.
  2. Cook bacon in large skillet over medium heat for about 2 minutes on both sides, if it starts to curl it's done, drain on paper. Cut pieces in drippings for another time.
  3. Cut each okra pod the long way down the side, leave the stem of pod on each half; remove seeds and insides.
  4. Stir together cream cheese, chives and remaining ingredients in a small bowl. Spoon cheese mixture into each okra pod. Wrap each one with 1 piece of bacon, and fasten with a wooden toothpick.
  5. Put okra, cheese side up on foil pan. Bake for 8 minutes or until it's tender and bacon is crisp. Place on plate and keep warm; until ready to serve.
