My mom grew up in Alabama with her mom and her Grandma Gallimore. This recipe is the way she made this for her family.

Ingredients

16 slice
bacon
1 lb
okra ( about 16 small ones)
8 oz
cream cheese
2 Tbsp
fresh chives, chopped fine
1/2 c
sharp cheddar, grated
1/4 c
chopped green onion
1/4 tsp
each of salt and pepper

How to Make Grandma Gallimore's Roasted Cheezy Okra

Step-by-Step

  • 1Heat oven to 425^. Line baking pan with foil and grease with bacon lard. Place oven rack on lowest level.
  • 2Cook bacon in large skillet over medium heat for about 2 minutes on both sides, if it starts to curl it's done, drain on paper. Cut pieces in half..save drippings for another time.
  • 3Cut each okra pod the long way down the side, leave the stem of pod on each half; remove seeds and insides.
  • 4Stir together cream cheese, chives and remaining ingredients in a small bowl. Spoon cheese mixture into each okra pod. Wrap each one with 1 piece of bacon, and fasten with a wooden toothpick.
  • 5Put okra, cheese side up on foil pan. Bake for 8 minutes or until it's tender and bacon is crisp. Place on plate and keep warm; until ready to serve.
