Ingredients

  • 2
    roma tomatoes
  • 1 oz
    cotjia or feta cheese
  • 2 slice
    crispy crumbled bacon
  • 1/4 c
    sweet pepper relish
  • pinch
    black pepper
  • ·
    **fresh chopped cilantro

How to Make Fresh Tomato Salad

Step-by-Step

  1. Cook bacon to crispy state, crumble. Cut tomatoes in large bite size pieces. Rough chop cilantro.
  2. Add sweet pepper relish, bacon, chopped cilantro and black pepper to tomatoes. Toss well to coat, set aside for 15-20 min.
  3. When ready to serve top with cotjia or feta cheese. Garish with more chopped cilantro and bacon if desired.
  4. I use Uncle Gary's Gourmet Sweet Pepper Relish.
