Fiesta Corn Fritters

Carilyn Johnson

These fried corn fritters with a Mexican twist are perfect for game day - easy and addictive! I love to serve them with a cold beer or soda to my family and friends on game weekends. Football is a big deal here in Texas, but we always like to add a Mexican twist to our Southern favorites. This recipe combines traditional corn fritters with a border classic, Mexican Corn.
