These are so good and so easy. You may want to add just a touch of green food coloring to dress them up, but it is not absolutely necessary.

Ingredients

  • 2 lb
    small zucchini
  • 2
    small onions
  • 1/4 c
    table salt
  • 2 c
    white vinegar
  • 2 1/4 c
    white sugar
  • 1 tsp
    celery seed
  • 1 tsp
    turmeric
  • 2 tsp
    mustard seed
  • ·
    green food coloring

How to Make EVEN I CAN MAKE 'EM PICKLES!!!

Step-by-Step

  1. Wash and slice the zucchini pretty thin.
  2. Peel and slice the onion thin.
  3. Toss zucchini and onion together.
  4. Cover the zucchini and onion slices with the water and salt.
  5. Let stand for two hours.
  6. Drain thoroughly.
  7. Bring the vinegar, sugar, celery seed, turmeric and mustard seed to a good boil.
  8. Add green food coloring, if desired.
  9. Let stand two more hours.
  10. Bring the entire mixture to a boil, and boil for five minutes.
  11. Pack in hot sterilized jars and seal.
