Edamame Broccomoli

My family loves this healthy alternative to guacamole. I happen to love Guacomole but the fat content is so high. Add chips or cut up vegetables. Enjoy and don't feel guilty.

  • 1
    avacado, peeled and diced
  • 1
    broccoli crown
  • 1
    12-16 oz bag of shelled edamame
  • 1
    small container or jar of pico de gallo
  • 1/4 c
    olive oil
  • 1 tsp
    garlic powder or to your taste

How to Make Edamame Broccomoli


  1. blanche the edamame and broccoli crown in rapidly boiling water for 2-3 minutes, then remove to ice bath.
  2. Combine avacado,edamame,broccoli,olive oil and garlic into a food processor and combine until desired texture.
  3. Remove mixture from food processor and combine with pico de gallo. Serve chilled with your favorite chip or veggie.
