My family loves this healthy alternative to guacamole. I happen to love Guacomole but the fat content is so high. Add chips or cut up vegetables. Enjoy and don't feel guilty.

Ingredients

  • 1 - avacado, peeled and diced
  • 1 - broccoli crown
  • 1 - 12-16 oz bag of shelled edamame
  • 1 - small container or jar of pico de gallo
  • 1/4 cup olive oil
  • 1 teaspoon garlic powder or to your taste

How To Make edamame broccomoli

  • Step 1
    blanche the edamame and broccoli crown in rapidly boiling water for 2-3 minutes, then remove to ice bath.
  • Step 2
    Combine avacado,edamame,broccoli,olive oil and garlic into a food processor and combine until desired texture.
  • Step 3
    Remove mixture from food processor and combine with pico de gallo. Serve chilled with your favorite chip or veggie.
