  • 1 large
    cucumber (about 12 oz.) unpeeled
  • 1
    container (7 oz.) roasted red pepper hummus
  • 2 Tbsp
    crumbled feta cheese
  • 26 slice
    kalamata or ripe olives

How to Make Cucumber-hummus stacks


  1. Using tines of a fork, score the cucumber lengthwise on all sides. Cut the cucumber into 26 (1/4 inch) slices. Blot dry with paper towel.
  2. Spoon a heaping teaspoon of hummus on each cucumber slice and sprinkle feta cheese on top and then top with an olive slice.
