Ingredients

  • 2 cups carrots, finely shredded
  • 6 - eggs
  • 1 1/4 cups milk
  • 1 tablespoon dried minced onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon white pepper
  • 1 cup shredded cheddar cheese

How To Make crustless carrot quiche

  • Step 1
    Preheat oven to 350 degrees. Buttera 9 inch pie pan.
  • Step 2
    Place carrots in a saucepan with just enough water to cover. Simmer,covered, until carrots are tender, about 5 mins
  • Step 3
    Drain thoroughly. In a separate bowl, beat eggs with milk, onion, salt, ginger, and pepper. Stir in carrots and cheese.
  • Step 4
    Pour batter into prepared pan. Place pan in a shallow pan of hot water. Bake for about 35 minutes or until a knife inserted near the center comes out clean. Let quiche stand for 5 minutes before serving.
