I have been searching for a good falafel recipe and this is it.. tweaked it a bit for more flavour. This comes from Cooking light

Ingredients

  • 1/4 cup minced red onion
  • 1 tablespoon dijon mustard
  • 3 cloves garlic
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon salt
  • 1 (15 1/2) cans chick peas (garbanzo beans)
  • 2 (1 oz) slices bread, whole wheat
  • 1 large egg
  • 1 large egg white
  • 1 teaspoon ground coriander
  • - olive oil, extra virgin
  • 2 - whole wheat pitas

How To Make crispy falafels

  • Step 1
    Combine first 12 ingredients in a food processor; pulse 6 times or until well blended (mixture will be wet).
  • Step 2
    Heat olive oil in a large nonstick skillet over medium-high heat. Spoon about 1/3 cup chickpea mixture per patty into pan; cook 4 minutes on each side or until golden brown.
  • Step 3
    Warm up your pitas, you can spread them with hummus, tahinne or tzatziki. I like mine with hummus and loads of salad!
