I have been searching for a good falafel recipe and this is it.. tweaked it a bit for more flavour.

Ingredients

  • 1/4 c
    minced red onion
  • 1 Tbsp
    dijon mustard
  • 3 clove
    garlic
  • 1 tsp
    ground cumin
  • 1/2 tsp
    paprika
  • 1/4 tsp
    ground black pepper
  • 1/8 tsp
    salt
  • 1 (15 1/2) can(s)
    chick peas (garbanzo beans)
  • 2 (1 oz) slice
    bread, whole wheat
  • 1 large
    egg
  • 1 large
    egg white
  • 1 tsp
    ground coriander
  • ·
    olive oil, extra virgin
  • 2
    whole wheat pitas

How to Make Crispy Falafels

Step-by-Step

  1. Combine first 12 ingredients in a food processor; pulse 6 times or until well blended (mixture will be wet).
  2. Heat olive oil in a large nonstick skillet over medium-high heat. Spoon about 1/3 cup chickpea mixture per patty into pan; cook 4 minutes on each side or until golden brown.
  3. Warm up your pitas, you can spread them with hummus, tahinne or tzatziki. I like mine with hummus and loads of salad!
