A great hearty snack with lots of fiber and protein. It will fill you up with lots of goodness.

Ingredients

  • 1 can black eyed peas
  • 1 can black beans
  • 2 cups frozen corn (small kernel)
  • 1/2 cup green pepper -chopped
  • 1/2 cup sweet white or red onion
  • 1 can diced tomatoes (rotel adds some spice if you like)
  • 1 cup zesty italian dressing (can use lowfat or fat free)
  • 3/4 teaspoon garlic or shallot salt
  • - jalapeno peppers (optional)
  • - multi-grain tortillas

How To Make cowboy salsa

  • Step 1
    Mix all ingredients together in large bowl and allow to sit for at least 2 hours. I purchase tortilla scoop chips in regular or the multi-grain. A real hit at parties!! Enjoy!!
  • Step 2
    I will also add touches of Cilantro, dill, and parsley to vary taste and color. It is a matter of your tastebuds. In the recipe I made today I used diced tomatoes with oregano.
