Ingredients
- 1 can black eyed peas
- 1 can black beans
- 2 cups frozen corn (small kernel)
- 1/2 cup green pepper -chopped
- 1/2 cup sweet white or red onion
- 1 can diced tomatoes (rotel adds some spice if you like)
- 1 cup zesty italian dressing (can use lowfat or fat free)
- 3/4 teaspoon garlic or shallot salt
- - jalapeno peppers (optional)
- - multi-grain tortillas
How To Make cowboy salsa

Step 1Mix all ingredients together in large bowl and allow to sit for at least 2 hours. I purchase tortilla scoop chips in regular or the multi-grain. A real hit at parties!! Enjoy!!

Step 2I will also add touches of Cilantro, dill, and parsley to vary taste and color. It is a matter of your tastebuds. In the recipe I made today I used diced tomatoes with oregano.
