A great hearty snack with lots of fiber and protein. It will fill you up with lots of goodness.

Ingredients

1 can(s)
black eyed peas
1 can(s)
black beans
2 c
frozen corn (small kernel)
1/2 c
green pepper -chopped
1/2 c
sweet white or red onion
1 can(s)
diced tomatoes (rotel adds some spice if you like)
1 c
zesty italian dressing (can use lowfat or fat free)
3/4 tsp
garlic or shallot salt
jalapeno peppers (optional)
multi-grain tortillas

How to Make Cowboy Salsa

Step-by-Step

  • 1Mix all ingredients together in large bowl and allow to sit for at least 2 hours. I purchase tortilla scoop chips in regular or the multi-grain. A real hit at parties!! Enjoy!!
  • 2I will also add touches of Cilantro, dill, and parsley to vary taste and color. It is a matter of your tastebuds. In the recipe I made today I used diced tomatoes with oregano.
