cowboy caviar
A friend brought this to a party, very tasty. The jalapeno and cilantro are optional, if you like it hot use them. I use the scoop tortilla chips.

Ingredients
- 3 - ears of corn
- 1 - green pepper
- 1 - red bell peppers
- 1 - jalapeno, (optional)
- 1 - med shallot
- 1 can black beans
- 1 can black eyed peas
- 1/2 cup cilantro, fresh (optional)
- 1/2 cup olive oil
- 1/4 cup lime juice
- 2 - avocados
- 2 teaspoons salt
- 2 teaspoons sugar
- 1/4 teaspoon cayenne pepper
- 1 bag tortilla chips
How To Make cowboy caviar

Step 1Remove kernels from corn

Step 2Dice all of the peppers and shallot. De-seed the jalapeno before dicing if you are using one. Note: instead of a single red pepper, buy the variety colors of mini peppers-yellow, orange and red

Step 3Drain and rinse the black beans and black eyed peas.

Step 4Chop cilantro if using it.

Step 5Combine all ingredients ( except avocados) and mix well.

Step 6Cover and chill for at least a few hours or overnight.

Step 7Dice and add avocados shortly before serving.

Step 8Serve with tortilla chips.
