Had something similar at a New Year's Eve Party. Since I was hosting a Packers vs Cowboys gathering, decided to make some to go with our taco bowls. Maybe it should be called Packers Caviar? Nah, doesn't have the same ring! Serve with crackers, tortilla chips, crudités or as part of a taco salad or bowl!

Ingredients

  • 1 can black beans, drained & rinsed (15 oz)
  • 1 can black-eyed peas, drained & rinsed (15 oz)
  • 1 can white shoepeg corn, drained (14 oz)
  • 1 - avocado, diced
  • 1 tablespoon lime juice
  • 2 - roma tomatoes, diced or 1 cup grape tomatoes, halved
  • 1/2 medium green pepper, diced
  • 1/2 - red pepper, diced
  • 1/2 medium onion, minced
  • 4-6 - green onions, sliced
  • 2 tablespoons minced pimento (optional)
  • 1 teaspoon garlic salt
  • 1/2 teaspoon garlic powder
  • 2 tablespoons minced cilantro
  • 1/2 cup prepared italian dressing
  • - salt and pepper to taste
  • - red pepper flakes to taste

How To Make cowboy caviar

  • Step 1
    Mix ingredients in large bowl. Sprinkle the lime juice on the avocado before you stir it in. Stir together. Adjust seasonings to taste.
  • Step 2
    PS I happened to have a started jar of pimento in the fridge - otherwise wouldn't have included it!
  • Step 3
    PPS Feel free to use "real" garlic instead of the garlic salt and powder!
