Well I have never had caviar but I have had this. I do not like blackeyed peas but I can eat this all day long. So I guess it must be pretty good.Enjoy!!!!!!!!!!!!!!

    black-eyed peas, drained
  • 1/4 c
    , chopped green onions
  • 1/4 c
    sweet red pepper, chopped
  • 2 Tbsp
    cooking oil
  • 2 Tbsp
    cider vinegar
  • 2 small
    jalapeno peppers, chopped and seeded
  • 1/4 tsp
    cracked black pepper
  • 1 dash(es)
  • 2 clove
    garlic, minced

How to Make Country Caviar


  1. Combine all ingredients together. Cover and chill overnight. Serve with crackers or tortilla chips.
