corn hushpuppies
My family loves hush puppies.I decided to make some today with dinner.I had some leftover canned corn in the refrigerator,I decided to add it to the hushpuppies since it wasn't enough for a meal.It's optional. You can serve these hot with butter,tartar sauce or hot sauce.

- - 1 1/2 c yellow cornmeal
- - 1 c all purpose flour
- - 2 t. baking powder
- - 1 t. baking soda
- - 3 t brown sugar
- - 1 t. salt
- - 1 t. cayenne
- - 3/4 c buttermilk
- - 1/2 c milk
- - 2 eggs
- - 1 c canned or fresh corn,cut off the cob
- - 1 large onion,minced
- - canola oil,for frying
- - hot sauce,optional
How To Make corn hushpuppies

Step 1In a large bowl, mix together dry ingredients. In a separate medium bowl, combine milk, buttermilk, eggs,corn and onion. Pour wet ingredients over dry ingredients and stir together just combined. Set the bowl aside to rest for one hour. In a deep-fat fryer, or cast iron skillet, heat about 2" of oil until it reaches 360 degrees F.Drop teaspoon-sized rounds of batter into the oil. Cook for about 3 minutes or until golden brown and crispy, turning halfway through. Remove from oil and drain. Serve with hot sauce if desired.
