I love these bean salad recipes so much. There used to be a lady at work who was always saying, "Cool beans." So I've borrowed her phrase for the name of this recipe, These are very "cool" beans indeed! Recipe: eatingrules.com Photo: tasteofhome.com

Ingredients

  • 1 can yellow wax beans
  • 2 cans green beans
  • 1 can red kidney beans
  • 1 can garbanzo beans (chickpeas)
  • 1 small onion, finely diced
  • 1/4 cup sugar
  • 1 teaspoon freshly ground black pepper
  • 1/2 cup vinegar (distilled white, or apple cider)
  • 1/4 cup extra virgin olive oil

How To Make cool beans

  • Step 1
    Empty all the beans into a colander and rinse.
  • Step 2
    Combine all ingredients in a large mixing bowl and stir until thoroughly mixed.
  • Step 3
    Empty mixture into a large, air-tight container and refrigerate for at least a few hours or overnight, shaking the container occasionally to help marinate. Serve cold.
