These are a perfect appetizer for any luncheon or dinner, or can be eaten alone as a light lunch.

Ingredients

  • 2 cups heart healthy bisquick mix
  • 1/3 cup grated parmesan cheese
  • 1/4 teaspoon each, salt and pepper
  • 1/4 teaspoon garlic powder
  • 1 large egg, lightly beaten
  • 1 cup buttermilk
  • 2 tablespoons olive oil
  • 1 cup cooked, chopped chicken breast
  • 1 cup cooked, chopped broccoli florets

How To Make chicken and broccoli puff appetizers

  • Step 1
    Heat oven to 425. Spray 12 muffrin cups w/ cooking spray. In lg bowl, combine first 5 ingredients.
  • Step 2
    Make a well in center of ingredients. In another bowl, whisk together eggs, buttermilk and oil. Add to dry ingredients.
  • Step 3
    Stir until moistened. Stir in chicken and broccoli. Spoon mix evenly into muffin cups. Fill to the top. Bake 20 mins. Let cool a few mins, then spoon out onto a platter.
