Ingredients
- 4 cups red and yellow cherry tomatoes, halved
- 1/2 cup minced scallions
- 1/2 cup fresh basil, thinly sliced
- 2 1/2 tablespoons extra-virgin olive oil, divided
- 1 tablespoon balsamic vinegar
- 1 clove fresh garlic, finely minced
- Kosher salt, to taste
- freshly ground black pepper, to taste
- 3/4 cup crumbled goat cheese
- 1 tablespoon capers, drained
How To Make cherry tomato, basil, and goat cheese salad

Step 1Put the tomatoes, scallions, and basil in a large bowl and toss.

Step 2In a small bowl, whisk together 2 Tbsp olive oil, vinegar, garlic, salt, and pepper to taste.

Step 3Pour over the tomato mixture and toss.

Step 4Place the tomato mixture in a shallow serving bowl or on a platter. Top with the crumbled goat cheese and sprinkle with the capers.

Step 5Drizzle with the remaining olive oil. Add a bit more of the cracked pepper if desired and serve.
