Ingredients

  • 4 cups red and yellow cherry tomatoes, halved
  • 1/2 cup minced scallions
  • 1/2 cup fresh basil, thinly sliced
  • 2 1/2 tablespoons extra-virgin olive oil, divided
  • 1 tablespoon balsamic vinegar
  • 1 clove fresh garlic, finely minced
  • Kosher salt, to taste
  • freshly ground black pepper, to taste
  • 3/4 cup crumbled goat cheese
  • 1 tablespoon capers, drained

How To Make cherry tomato, basil, and goat cheese salad

  • Step 1
    Put the tomatoes, scallions, and basil in a large bowl and toss.
  • Step 2
    In a small bowl, whisk together 2 Tbsp olive oil, vinegar, garlic, salt, and pepper to taste.
  • Step 3
    Pour over the tomato mixture and toss.
  • Step 4
    Place the tomato mixture in a shallow serving bowl or on a platter. Top with the crumbled goat cheese and sprinkle with the capers.
  • Step 5
    Drizzle with the remaining olive oil. Add a bit more of the cracked pepper if desired and serve.
