Ingredients
- 4 cups red and yellow cherry tomatoes, halved
- 1/2 cup minced scallions
- 1/2 cup fresh basil, thinly sliced
- 2 1/2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 clove fresh crushed garlic
- - kosher salt and freshly ground black pepper to taste
- 3/4 cup crumbled goat cheese
- 1 tablespoon capers, drained
How To Make cherry tomato basil and goat cheese salad

Step 1Put the tomatoes, scallions and basil in a large bowl and toss.

Step 2In a small bowl, whisk together 2 tablespoons of the olive oil, The vinegar, garlic and the salt and pepper to taste. Pour over the tomato mixture and toss.

Step 3Place the tomato mixture in a shallow serving bowl or on a platter. Top with the crumbled goat cheese and sprinkle with the capers.

Step 4Drizzle with the remaining olive oil and add a bit more of the cracked pepper if desired and serve.
