This light and refreshing cherry tomato, basil, and goat cheese salad will be a wonderful addition to your summer menu. The tomato medley is almost sweet compared to the remaining ingredients. It's lightly dressed with a tangy homemade balsamic vinaigrette. Thinly sliced fresh basil adds another layer of sweet and peppery flavor. When mixed with the tangy goat cheese and salty capers, it's a delicious summer side dish. This will be great alongside a piece of grilled fish or chicken.

Ingredients

  • 4 cups red and yellow cherry tomatoes, halved
  • 1/2 cup minced scallions
  • 1/2 cup fresh basil, thinly sliced
  • 2 1/2 tablespoons extra-virgin olive oil, divided
  • 1 tablespoon balsamic vinegar
  • 1 clove fresh garlic, finely minced
  • Kosher salt, to taste
  • freshly ground black pepper, to taste
  • 3/4 cup crumbled goat cheese
  • 1 tablespoon capers, drained

  • Put the tomatoes, scallions, and basil in a large bowl and toss.
