I wanted some type of french bread to go with our pasta and meatballs, but not the same ole, same ole, so this is what I came up with. This could be a vegetarian meal on it's own.

Ingredients

  • 2
    loaf french bread
  • 1 medium
    red onion, thinly sliced
  • 4-5
    baby bello mushrooms, sliced
  • 3 clove
    garlic, minced or crushed
  • ·
    olive oil or butter
  • 1 c
    mozzarella cheese, grated
  • 1/4 c
    parmesan cheese, grated
  • ·
    red pepper flakes

How to Make Cheesy onion and mushroom French Bread

Step-by-Step

  1. Saute onions and garlic in about 2 tbs. of olive oil or butter till tender. Add sliced mushrooms and cook about 5 min. more. I like to cover my skillet with a lid to hurry along the process.
  2. Slice bread in half, slightly brush with olive oil or butter. Sprinkle grated mozzarella, add onions, garlic and mushrooms. Top with a little more mozzarella and some Parmesan and red pepper flakes. Place under broiler just long enough to melt cheese.
