I love this stuff, a lot of time we'll just have this with some fried calamari or some shrimp for dinner. I like to use a variety of different tomatoes together.

5 or 6 c
diced tomatoes
1 oz
chopped fresh basil
4 clove
minced garlic
1/2 c
parmesan cheese
3 Tbsp
olive oil
2 Tbsp
balsamic vinegar
1/2 tsp
1/4 tsp
black pepper
loaves italian bread
shredded mozarella, romano, parmesan or asiago cheese to sprinkle on top.
olive oil & garlic powder for bread

How to Make brushetta


  • 1rinse and chop the tomatoes and basil, add garlic, olive oil, balsamic vinegar, salt, pepper and parmesan cheese,toss together, set aside.
  • 2slice italian bread in half inch slices, brush both sides of bread with olive oil, place bread on baking sheets and sprinkle lightly with garlic powder, bake at 350* just till crisp but not hard about 4 or 5 minutes. remove from oven.
  • 3top each slice of bread with 1 or 2 tablespoons of tomatoe mixture and sprinkle with a little shredded cheese and enjoy
  • 4if I'm having a lot of people over I just toast the bread and put in a basket and leave the tomatoe mixture in a bowl and the shredded cheese on the side for everyone to help themselves.
