I love this stuff, a lot of time we'll just have this with some fried calamari or some shrimp for dinner. I like to use a variety of different tomatoes together.

Ingredients

  • 5 or 6 cups diced tomatoes
  • 1 ounce chopped fresh basil
  • 4 cloves minced garlic
  • 1/2 cup parmesan cheese
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 - loaves italian bread
  • - shredded mozarella, romano, parmesan or asiago cheese to sprinkle on top.
  • - olive oil & garlic powder for bread

How To Make brushetta

  • Step 1
    rinse and chop the tomatoes and basil, add garlic, olive oil, balsamic vinegar, salt, pepper and parmesan cheese,toss together, set aside.
  • Step 2
    slice italian bread in half inch slices, brush both sides of bread with olive oil, place bread on baking sheets and sprinkle lightly with garlic powder, bake at 350* just till crisp but not hard about 4 or 5 minutes. remove from oven.
  • Step 3
    top each slice of bread with 1 or 2 tablespoons of tomatoe mixture and sprinkle with a little shredded cheese and enjoy
  • Step 4
    if I'm having a lot of people over I just toast the bread and put in a basket and leave the tomatoe mixture in a bowl and the shredded cheese on the side for everyone to help themselves.
