I love this stuff, a lot of time we'll just have this with some fried calamari or some shrimp for dinner. I like to use a variety of different tomatoes together.

Ingredients
- 5 or 6 cups diced tomatoes
- 1 ounce chopped fresh basil
- 4 cloves minced garlic
- 1/2 cup parmesan cheese
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 - loaves italian bread
- - shredded mozarella, romano, parmesan or asiago cheese to sprinkle on top.
- - olive oil & garlic powder for bread
How To Make brushetta

Step 1rinse and chop the tomatoes and basil, add garlic, olive oil, balsamic vinegar, salt, pepper and parmesan cheese,toss together, set aside.

Step 2slice italian bread in half inch slices, brush both sides of bread with olive oil, place bread on baking sheets and sprinkle lightly with garlic powder, bake at 350* just till crisp but not hard about 4 or 5 minutes. remove from oven.

Step 3top each slice of bread with 1 or 2 tablespoons of tomatoe mixture and sprinkle with a little shredded cheese and enjoy

Step 4if I'm having a lot of people over I just toast the bread and put in a basket and leave the tomatoe mixture in a bowl and the shredded cheese on the side for everyone to help themselves.
