I had some left over beets, so why not!

Ingredients

  • 2 large beets
  • 2 cups carrot, shredded
  • 2 large limes, juiced
  • 2 tablespoons cilantro, fresh, minced
  • 2 cloves garlic, minced
  • 1/2 teaspoon cayenne pepper

How To Make beet and carrot ceviche

  • Step 1
    Rinse the beets and cut them into small straws.
  • Step 2
    Mix the prepared beets with the lime, herbs, cayenne pepper and garlic.
  • Step 3
    Let it sit for about 15 minutes and add more lime and cayenne to taste (the beets soak it up).
  • Step 4
    Add the carrots toward the end so they stay orange.
