Ingredients
- 2 large beets
- 2 cups carrot, shredded
- 2 large limes, juiced
- 2 tablespoons cilantro, fresh, minced
- 2 cloves garlic, minced
- 1/2 teaspoon cayenne pepper
How To Make beet and carrot ceviche

Step 1Rinse the beets and cut them into small straws.

Step 2Mix the prepared beets with the lime, herbs, cayenne pepper and garlic.

Step 3Let it sit for about 15 minutes and add more lime and cayenne to taste (the beets soak it up).

Step 4Add the carrots toward the end so they stay orange.
