  • 2 large
  • 2 c
    carrot, shredded
  • 2 large
    limes, juiced
  • 2 Tbsp
    cilantro, fresh, minced
  • 2 clove
    garlic, minced
  • 1/2 tsp
    cayenne pepper

How to Make Beet and Carrot Ceviche


  1. Rinse the beets and cut them into small straws.
  2. Mix the prepared beets with the lime, herbs, cayenne pepper and garlic.
  3. Let it sit for about 15 minutes and add more lime and cayenne to taste (the beets soak it up).
  4. Add the carrots toward the end so they stay orange.
