Ingredients

2 large
beets
2 c
carrot, shredded
2 large
limes, juiced
2 Tbsp
cilantro, fresh, minced
2 clove
garlic, minced
1/2 tsp
cayenne pepper

How to Make Beet and Carrot Ceviche

Step-by-Step

  • 1Rinse the beets and cut them into small straws.
  • 2Mix the prepared beets with the lime, herbs, cayenne pepper and garlic.
  • 3Let it sit for about 15 minutes and add more lime and cayenne to taste (the beets soak it up).
  • 4Add the carrots toward the end so they stay orange.
