These delicious little bites are a big "hit" at parties. Bursting with flavor and texture they are fun to make and they make an exciting presentation.

Ingredients

  • 1/2 package bacon
  • 4 large avacados
  • 1 large jicama
  • 3 cups panko crumbs
  • 1/4 cup sesame seeds
  • 1/8 teaspoon celery salt
  • 1/8 teaspoon paprika
  • 1/8 teaspoon crushed red pepper
  • dash - dill
  • dash - black pepper
  • 1 tablespoon sun dried tomato, finely chopped
  • 1 tablespoon chives, finely chopped
  • 1/2 cup cherry balsamic, reduced

How To Make bacon cherry bombs!

  • Step 1
    Fry until crispy half a pound of bacon then fine chop and set aside on a paper towel to drain.
  • Step 2
    Peel and smoosh 4 large avocados until they can be mixed but are still lumpy.
  • Step 3
    Peel and cut jicama into two inch sticks about the thickness of a sharpie and set aside.
  • Step 4
    Gently mix the bacon into the avocado.
  • Step 5
    Toss the rest of the ingredients to fully mix then pour onto a baking sheet and roast at 400 degrees until just toasted. Be careful not to let them burn.
  • Step 6
    Form the avocado mixture into balls about 1 ½ inch in diameter.
  • Step 7
    Roll the bombs in the Panko crumb mixture until completely coated.
  • Step 8
    Insert a jicama stick into each one and drizzle the bottoms with cherry balsamic. Serve standing up on a tray or in shot glasses.
